Fig. 3 shows that compared to raw SPI powder (20.3 %), the protein solubility of oil-free SPI extrudate (4.6 %) decreased by 77.3 %. The declined solubility might be explained by the formation of large protein aggregates after the proteins were denatured by heat and shear stress inside the extruder ( Lin and Hsieh, 2000 , Wang et al., 2022a ).

A total of 20 kg of both soybean and corn, were ground into flour in a mill 2HP Engine 16 in (Raymond, USA). The flours were sieved to pass through a 150 μm screen. Soybean and corn flours were mixed at various weight ratios, and the total moisture contents of the blends adjusted to the desired values, prior to processing.
